My husband is half-Italian and loves pasta.
My boys are 1/4 Italian and absolutely pasta.
I, however, am not Italian, nor do I enjoy pasta all the much.
Turns out, I don't mind pasta but I'm not a huge fan of tomato sauce (surprising since I don't like tomatoes either)!
I now have a simple recipe that I can have when the boys have their pasta without having to do much 'secondary' cooking (a.k.a making an entire second meal).
It's a really yummy garlic and butter shrimp pasta.
1 1/2 cups of almost cooked pasta
Shrimp (as much as you would like)
2 Tbsp of butter
2 cloves of garlic
1 1/2 Tbsp of olive oil
Cook the pasta like you normally would. While the pasta is cooking, remove the tails of the shrimp, dice up the garlic and stick both into a bowl with the olive oil. Once the pasta is almost ready, put 2 Tbsps (or more/less) into a frying pan on medium heat. Once the butter is melted and bubbling, dump the shrimp and garlic into the pan and let it cook for about 45 seconds to a minute (or until the shrimp is pink). Turn the heat down a bit more and add the pasta. Mix it all together (I find a fork works well for this) and let the butter and garlic mix into the pasta. Let sit for about a minute. Eat!
The thing that I love about this recipe is that you can adjust it to what you need. I make a cup and a half of pasta so that I can have some left over for lunch the next day. If you like really garlicky food, than you can add more garlic. If you're watching what you eat than you can adjust the butter and pasta.
