Tasty Thursday - Cherry Cheesecake

One of family traditions at Christmas/Thanksgiving dinners is to have cherry cheesecake for dessert. Typically, I'm not the one making this, but someone stole the mac and cheese that I usually make so I was put on cheesecake duty. So here is my recipe!
- 250g cream cheese
- 1 can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp vanilla
- 1 can cherry pie filling
- 1 pre-made graham cracker crust

Soften the cream cheese in the microwave. Beat until smooth. Add the condensed milk, lemon juice and vanilla and continue to beat until the ingredients are blended and the mixture looks slightly thickened and smooth. Pour mixture into pre-made graham cracker crust. Place in fridge to set (for as long as you'd like). When ready to serve, pour cherry filling over top! Enjoy!

Oh Pink eye... I loathe you. There is a lot of this going on in my house right now.

A crying, miserable baby. Monkey appears to have contracted pink eye over the past couple of days. I'm not a mom who worries about her kids getting colds. In fact, I've been quite fine when Joseph contracts the odd sickness because it means his immune system is getting stronger and more prepared for daycare.

However, pink eye is a demon all in itself! My happy, fun-loving boy is now moody. He'll be happy for 5 minutes, cranky for 10. Sleeping has now regressed and he's up at least twice a night. He's only had pink eye for two so hopefully it will end when the pink eye goes away.

While I'm not the mom to worry about sickness and rush my baby to the doctor, if something persists I do take them. Or if something like conjunctivitis appears I would take my child to the doctor. Not possible on the Christmas weekend. We figured it not an ER issue so he can hold out for a day and we'll take him on Boxing Day. WRONG! Not only was our doctor's office closed, so were the two other clinics we drove to. It didn't end there, I called four other clinics - ALL closed.

In steps the nurse practitioner on the phone, "He should be fine for tonight, get him to a doctor within the next 24 hours". So now my Monkey gets to suffer. I call BS to Emergency Room backlog. If you don't want us "non-emergency" patients in the ER, open your offices and take care of us.

Time to step off my soapbox and snuggle my Monkey.

Monkey's Christmas Recap

Monkey appears to have loved his first Christmas despite the pink eye he picked up! We spent a couple of days at The Husband's parents' house where Monkey was spoiled for the first time. He got some new Robeez (Elmo), Scout, some cars, a fridge magnet farm set and a Sesame Street Grilled Cheese maker!

After that we headed back to our house, where he opened presents from Santa and The Husband and I. We got some wooden puzzles, lots of books and a small Thomas the Train set.

Christmas Day, we headed to my side of the family where Monkey was spoiled even more by more aunts and uncles and grandparents. He got a wagon, a pirate ship, a ball popper, an activity table, some cars from his cousin (although two were missing because his cousin decided to open them before Christmas) and a musical farm set.

Technically, my Christmas present from my parents is for him. It's a portable DVD player for the back of the car when we take Monkey on long car rides. I guess it could still be my present because I could sit back there with him and watch the movies while The Husband chauffeurs us around!

A Blah Christmas

I'm just not feeling Christmas this year. Usually, I love Christmas. I love all the lights and I can't wait until I put up the tree and all the decorations. I was so excited at the end of November to get everything ready to go! Don't get me wrong, I still love the lights and the tree but I haven't put out all of my decorations and all of the crafts and activities I wanted to do from Pinterest haven't and (and most likely will not) done. I just don't have the motivation

I think what is bringing me down is the fact that 2 weeks after Christmas, I have to leave my little boy at daycare and head back to work with 23 Grade 6 munchkins driving me nuts! I know he's going to be fine and that he probably won't even notice me leaving, but there's a part of me that is going to lose it.

I just feel so sad that I'm so upset by this. I should be excited that this is Monkey's first Christmas (even though he has no clue what's going on). Instead, my mind goes straight to Jan. 9th and I get all upset and cry.

Please tell me it will be okay. I will get over this and it's only 6 months to summer right?

Who knew a year could go by so fast??

Oh Christmas Tree!

I finally decided to do a post about my Christmas tree. I have dubbed it the "Charlie Brown" Christmas Tree. It sits on a table in our family room, uses only two strands of lights and very few ornaments. I can't wait to get a bigger tree someday.

Sponsor swap for January

So I'm looking to srpuce up my site, gain some new readers and take some new steps in this adventure called blogging. I think I've gotten the hang of a bunch of the things and now, starting in January, I'm ready to take it to a whole new level.

To start, I'm working on my PR page and scouting out some giveaways for my readers.

Tasty Thursday - Cookie Dough Truffles

Last weekend I went to a cookie exchange at my friend Emily's (her husband Ryan had a football party so Monkey and The Husband were able to come too). I made my Soft Ginger Cookies and actually won for "Best Tasting Cookie" which I think is pretty good. However, there was another recipe that I thought was absolutely amazing. They are called Cookie Dough Truffles and they were made by my friend Jenn.

1/2 cup butter, softened
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (14-ounce) can sweetened condensed milk
1/2 cup semisweet mini chocolate morsels
1 cup finely chopped pecans
1 1/2 pounds chocolate bark candy coating, melted

In a large bowl cream butter and brown sugar with an electric mixer at medium speed until creamy. Add vanilla. Gradually beat in flour and add milk. Add chocolate morsels and pecans, mixing well. Shape into 1-inch balls. Place on waxed paper; chill 2 hours.

*Cook's Note: Since the dough is stick roll your fingers into flour. This will make it easier to roll.
Melt chocolate bark candy coating in a double boiler. Using 2 forks, dip cookie balls into candy coating to cover. Place on waxed paper and chill to set. Store in the fridge for at least 1 hour.

Back from Arizona

Monkey and I have made it back from our trip to Arizona! There was a lot of shopping, eating out and whining (from the baby). It was just Monkey, my mom and myself and now I need a vacation to recover from this vacation! We tried really hard to keep Monkey on schedule because Arizona is two hours behind our time zone. This meant that he was up everyday at 5 AM. As much work as he was, he did really well on the plane, which I was most worried about so I'm glad it went well.
